Turkey Meatballs with Lemongrass and Ginger √
Serves 6.
Note: Lemongrass and ginger infuse these flavorful and versatile little meatballs. In this recipe, they're simply served on lettuce leaves which can used as wraps, but they are just as delightful served over rice or as a filling in a banh-mi style sandwich. Fresh lemongrass can be found in the produce section of most grocery stores. To mince the lemongrass, cut off the lower bulb with the woody center and remove tough, outer leaves. The main stalk (the yellow section) is usually about 4 inches long. Thinly slice the stalk, then mince the slices. Fish sauce is available in the Asian section of the supermarket. • 3 tbsp. fish sauce, divided (see Note)
