Green eggs and ham

You don't need to be Irish to enjoy this spring dish.

I have been saving this recipe since December when it arrived on my desk. Finally, the time is right to publish it. The recipe is so incredibly charming it just about shouts "print me."

So here it is: green eggs and ham. It's suited for any occasion, of course, but perfect for St. Patrick's Day: simple, flavorful and green.

Green Eggs and Ham

Serves 4.

• 4 English muffins, split in half

• 4 slices prosciutto, or thinly sliced ham

• 2 tsp. butter

• 4 eggs

• Salt and pepper, to taste

• 4 tbsp. prepared basil pesto

Directions

Toast the English muffins. Top 4 halves evenly with prosciutto.

Melt butter in nonstick skillet over medium heat. Crack eggs into skillet. Cook for about 4 to 5 minutes (4 minutes for eggs with runny yolks and 5 minutes for eggs with yolks that are slightly set). Season with salt and pepper.

Transfer eggs to muffin halves with prosciutto. Top each with 1 tablespoon pesto and remaining muffin half.
