Garlic-Flavored Cooked Mayonnaise

Makes about ½ cup.

My version of McGee's cooked mayonnaise is liberally flavored with garlic, which makes it delicious as a sandwich spread or to top crusty French bread. McGee rightly advises having two clean, dry whisks on hand before beginning.

1 egg yolk, at room temperature

1 tsp. white wine vinegar

1 tbsp. water

1/3 to ½ c. olive or safflower oil

2 to 3 garlic cloves, finely minced

Dash cayenne pepper

Place egg yolk in small glass bowl (no larger than 2-cup volume), and whisk until frothy. Whisk in vinegar, then water. Cover bowl with plate and microwave on high (100 percent power) 20 seconds.

Remove from microwave. Quickly beat egg mixture with clean whisk until smooth. Cover bowl and return to microwave. Microwave on high (100 percent power) 10 to 15 seconds. Beat again with clean whisk. Cover bowl and let stand 1 minute.

Place bowl in shallow pan of cold water and stir until lukewarm. Slowly begin to whisk in oil, 1 teaspoon at first, then in larger amounts after mayonnaise begins to thicken. Add garlic and cayenne. Refrigerate in covered container overnight to thicken.

Curried Tofu Mayonnaise

Makes about 1 cup.

Another option is egg-free mayonnaise made with silken (soft) tofu. Even if you're ambivalent about tofu, this recipe will win you over. It's much lower in fat than traditional mayonnaise, has no cholesterol and tastes great.

8 oz. soft tofu (do not use firm)

2 tbsp. apple cider vinegar

1 tsp. Dijon mustard

1 tsp. lemon juice

1½ tsp. curry powder

Salt, pepper

Puree tofu, vinegar, mustard, lemon juice and curry powder in blender or food processor until smooth and thick. Season with salt and pepper to taste. Makes approximately 1 cup.

Roasted Garlic Mayonnaise Dip

Makes 1 cup.

Once you have your homemade mayonnaise of preference, make this creamy dip. It's great alongside crudites or sesame bread sticks. Thinned with olive oil, it also makes a delicious creamy salad dressing. Either the Garlic-Flavored Cooked Mayonnaise or the Curried Tofu Mayonnaise can be used; if you purchase mayonnaise for this recipe, choose a low-fat version.

1 head garlic

1 c. low-fat or homemade cooked or tofu mayonnaise

2 green onions, finely chopped

Place garlic on baking sheet coated with nonstick vegetable spray. Bake at 350 degrees 1 hour until very soft. Let cool. Press garlic from cloves into bowl and mash with fork. Whisk in mayonnaise and onions. Makes 1 cup.
