CHICKPEA PATTIES

Serves 3.

Note: The original recipe is from Swedish food writer Malin Söderström. Add additional spices, if desired. Cost per serving: 75 cents.

• 1 (15-oz.) can chickpeas (garbanzo beans), rinsed and drained

• 1 tbsp. butter

• 1 medium onion, chopped finely

• 2 cloves garlic, minced

• 1 tsp. salt

• Pinch of coriander

• Pinch of cumin

• Pinch of black pepper

• Pinch of chili powder

• 1 to 2 tbsp. oil for frying

Directions

Purée the chickpeas in a food processor or blender; set aside. Melt the butter in a skillet over medium heat. Add onion and garlic and sauté until they are soft. Remove from heat.

Add the peas and all the spices; mix well. Prepare 4 to 6 patties of uniform size.

Heat oil and fry the patties gently for several minutes on each side, until browned and crispy.

Serve with plain yogurt with mint and chili sauce added (see above).
