Robert Dubuc is getting ready to reopen his Bread, Coffee and Cake bakery and restaurant in Mendota Heights, more than a year after his St. Paul business was smashed by a van-sized boulder that had tumbled down the Wabasha bluffs.
Dubuc said the new shop, known as BC2, will be open in Mendota Plaza by Labor Day. Dubuc said he plans to initially serve breakfast and lunch and eventually add a dinner menu.
No one was hurt in the accident that destroyed the old location, but Dubuc said he had no desire to rebuild there. "I didn't want to always be thinking about what had happened," he said. Dubuc said he spent several months looking for new locations in St. Paul and Hudson, Wis., before settling on Mendota Heights.
Dubuc said there wasn't much to salvage at the damaged store, but he did have the presence of mind to grab his 13-year-old sourdough starter. A former chef trained at the California Culinary Academy in San Francisco, Dubuc has developed his own recipes for artisan sourdough and whole grain breads.
BC2 will be the second of two new tenants at Mendota Plaza. Sedona Skin Care, whose services include botox, laser hair removal and spa treatments, also will open this fall, according to Mark Robinson, leasing representative for the center. It's the second location for Sedona, which also has a store in Edina.
Located at Hwy. 110 and Dodd Road, Mendota Plaza is one of 13 neighborhood shopping centers owned and operated by St. Paul-based Paster Enterprises.
Toppers Pizza comes to BurnsvilleToppers Pizza is opening its seventh Minnesota location in Burnsville on July 28, and to celebrate, it will give its first 50 customers free food for a year. The new store is in Wood Park Plaza on County Road 42 E. and 10th Avenue.
Based in Whitewater, Wis., Toppers has 42 outlets nationwide, including three stores in Minneapolis and one each in Bloomington, St. Paul and Mankato.
