Recipe: Hanukkah Cookies

Hanukkah Cookies

Makes about 6 dozen.

Decorative sugars and sprinkles are available at Lynn's Cake and Candy Supplies (612-784-2186) and Sweet Celebrations (612-435-3377).

1½ c. powdered sugar

1 c. butter or margarine, at room temperature

1 egg

1 tsp. vanilla

½ tsp. almond extract

2½ c. flour

1 tsp. baking soda

1 tsp. cream of tartar

Decorative blue sugar and sprinkles

In mixing bowl, beat sugar and butter or margarine. Add egg, vanilla and almond extract; mix well. Combine flour with baking soda and cream of tartar. Blend dry ingredients into butter mixture. Cover bowl or wrap dough in plastic wrap; refrigerate 2 to 3 hours or overnight. Preheat oven to 375 degrees. Line baking sheets with parchment paper, or lightly grease baking sheets. Divide dough into thirds and work with a third of the dough at a time. On lightly floured surface roll dough to 3/16-inch thickness. Use Hanukkah-themed cookie cutters to cut dough into shapes. Transfer to baking sheets. Sprinkle cookies with blue sugar and sprinkles. Bake cookies until lightly browned, 7 to 8 minutes.
