Radish and Carrot Slaw

Serves 4.

Radishes make this unusual version of cole slaw a great side dish for weekend sandwiches.

1 c. grated daikon radish

1 c. thinly sliced red radishes

2 c. grated carrots

¼ c. thinly sliced red onion

2 tbsp. rice vinegar

1 tsp. sugar

2 tbsp. olive oil

¼ c. minced fresh parsley

Salt and pepper to taste (optional)

In a large bowl, combine the radishes, carrots, onion, vinegar, sugar, olive oil, parsley, salt and pepper. Let marinate 30 minutes before serving.

Daikon Dipping Sauce

Makes 1 c.

Some Asian cooks serve this dipping sauce alongside oil-fried tempura dishes or sushi vegetable rolls. It keeps for 3 weeks when refrigerated.

¼ c. rice wine (sake)

¼ c. low-sodium soy sauce

3 tbsp. grated daikon radish

½ c. defatted broth (vegetable or chicken)

1 tbsp. grated fresh ginger root

In a small bowl, combine rice wine, soy sauce, radish, broth and ginger root. Makes about 1 cup.

Two Radishes with Lemon and Herbs

Serves 4.

Try this as a colorful and crunchy side dish with grilled fish.

1 tsp. olive oil

2 c. julienned daikon radish

2 c. thinly sliced red radishes

2 tsp. fresh lemon juice

1 tbsp. chopped fresh dill weed

1 tsp. chopped fresh parsley

Heat oil in a 10-inch nonstick skillet over medium-high heat. Add radishes and stir-fry 5 minutes, or until tender. Add small amount of water if needed to prevent sticking. Add lemon juice, dill weed, and parsley, and toss to coat. Serve immediately.
