Beef and Broccoli Stir-Fry

Serves 4.

Note: Oyster sauce is found with Asian ingredients at the supermarket. From "Dinner Made Simple," by the editors of Real Simple magazine. • 1 c. uncooked white rice

• 1 lb. sirloin steak, sliced

• 2 tbsp. canola oil

• 1 tbsp. chopped fresh ginger

• 2 c. broccoli florets

• 3 tbsp. oyster sauce (see Note)

• 3 tbsp. rice vinegar

• 1/4 c. roasted peanuts

Directions

Cook rice according to package directions. Preheat skillet, with oil, over medium-high heat. Brown steak, in 2 batches, 2 to 3 minutes; remove from pan.

Add ginger, broccoli and 1 cup water to the skillet. Cook, tossing often, until tender, 6 to 8 minutes. Add the steak, oyster sauce and vinegar; cook, tossing, until thickened, 1 to 2 minutes. Serve over the rice with the peanuts.
