Tomatillo-Red Pepper Salsa

Serves 12 to 15.

This simple cooked salsa highlights the citrus taste.

  • 1 large red bell pepper, seeded and chopped
  • 4 medium tomatillos, husked and chopped
  • 4 cloves garlic, minced
  • ½ small red onion, chopped
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • ¼ tsp. ground cinnamon
  • 1 tbsp. olive oil
  • Pinch salt
  • ¼ c. chopped cilantro
  • In a medium saucepan over medium heat, combine bell pepper, tomatillos, garlic, onion, cumin, coriander, cinnamon, oil and salt. Cook 10 minutes, stirring frequently, or until peppers are soft. Remove from heat; stir in cilantro. Let cool before serving.

    Spicy Green Tomato Sauce

  • Makes about 8 servings.
  • This green sauce is delicious on grilled foods, especially fish.

  • 2 c. chopped green tomatoes or tomatillos
  • 2 tbsp. apple juice
  • 1 c. chopped white onions
  • ½ c. chopped green bell peppers
  • ½ c. canned diced chiles
  • 3 cloves garlic, minced
  • 1 tbsp. minced fresh parsley
  • 1 tsp. hot pepper flakes, or to taste
  • Salt to taste
  • In large saucepan over medium heat, combine tomatillos and juice. Bring to a boil. Add onions, bell peppers, chiles, garlic, and hot pepper flakes. Cook 20 minutes, covered, or until peppers soften. Add parsley and salt.
