Herbivorous Butcher in cookbook

Props to Aubry and Kale Walch, the brother-sister team behind the Herbivorous Butcher, the vegan butcher shop market in Minneapolis. They're part of a revised cookbook, "Home Sausage Making," by Charles Reavis and Evelyn Battaglia (Storey, $24.95), now in its fourth edition. The authors forgive Aubry for not sharing her meat-free basic recipe, noting the years of testing that went into it. But she talks about technique and the degree of experimentation that a sausage can withstand — and even inspires.

A good deed done

Props also to the Minneapolis Farmers Market, Hennepin County, chef Chris Loew of Taher Inc. and the Food Group for banding together to rescue and preserve excess produce from the market in August. Volunteers washed, cut, cooked, packaged and froze excess produce for distribution to food shelves and meal programs during winter months when produce is in short supply. All told, about 2,400 pounds of produce will end up on someone's plate instead of at a composting facility or in the trash.

Cookie Cart benefit

Tickets now are on sale for the ninth annual Cookie Cart Chefs' Dinner fundraiser Oct. 29 at Town & Country Club in St. Paul. Four top chefs, all alumni of the Art Institutes International Minnesota Culinary School, will collaborate on a four-course gourmet dinner with wine pairings. Cookie Cart was founded in 1988 by the late Sister Jean Thuerauf, who wanted to provide a safe, secure, creative and engaging space for area teens; the bakery program is now able to employ and serve 200 teens. When Everything is enough

Tucked into the usual news release about pumpkin flavors at Bruegger's Bagels was a life jacket of sorts for those drowning in the autumnal flood of squashy spice. The chain's executive chef has shared a recipe for the "everything" topping on its bagels. It's described as a "make-at-home" bootleg recipe, enabling corporate secret ingredient to remain just that. But here it is, for your baking and seasoning needs:

Bruegger's Bootleg Everything Bagel Seasoning

Makes 1 cup.

• 4 tbsp. kosher salt

• 2 tbsp. sesame seeds

• 2 tbsp. poppy seeds

• 2 tbsp. caraway seeds

• 2 tbsp. dried minced garlic

• 2 tbsp. dried onion

• 2 tbsp. ground black pepper

Directions

Combine and store in an airtight container. Keep in a cool place.
