Some wine terms are hard to define, falling more into "you know it when you sip it" territory. The Quinta di Dorado Auratus ($16) is the very definition of "clean," with crisp, refreshing texture and bracing minerality melding with pure, fresh fruit. This 50-50 blend of alvarinho and trajadura wears its color on its label: "Auratus" is Portuguese for "golden." This wine was made for a platter of tapas and is likely to work with anything short of charred beef or game.
