Dispatch: Maple syrup from Audubon Center of the North Woods

“In an average year we produce 80 gallons of syrup, with last year being our second best at 132 gallons. We’re the only nonprofit residential environmental learning center that does maple syruping at this scale. Residential K-12 school visits are our primary revenue source, and they often use fundraisers to pay for their visits. We sell our syrup to them at cost, which is a more environmentally-friendly, healthier fundraiser that schools can use rather than the traditional candies and cookies. Maple syrup is a great sweetener. It has a low glycemic index, and it doesn’t cause the inflammation on your blood vessels and joints like refined sugar does. When you purchase maple syrup, you’re basically supporting sustainable forestry because you need mature forests to produce syrup.”
