A couple of big grand openings in the Twin Cities are slated for this week: a new Buffalo Wild Wings-sponsored pizza restaurant, PizzaRev, in Hopkins, and a Lunds supermarket in downtown St. Paul.

PizzaRev is a southern California-based pizza concept that Golden Valley-based Wild Wings invested in last year. On Wednesday, the first of six PizzaRev outlets planned for Minnesota this year will open.

The restaurant is "fast-casual": a Chipotle like production of pizza in which customers get in line and pick their toppings. PizzaRev is part of a long-term effort by Buffalo Wild Wings to diversify into restaurant concepts beyond its core wings and beer motif.

Meanwhile, Edina-based Lund Food Holdings continues its long-term expansion with a 22,000-square foot supermarket in downtown St. Paul. Officials and residents have been eager for a major grocery there as the downtown residential population has increased.

Lunds will be located in the Penfield at 10th and Robert streets, a city-developed luxury apartment complex that opened earlier this year.

The St. Paul store is Lunds' 13th in the metro area. It also owns 11 Byerly's stores, and will soon be adding to two more Byerly's. Lunds is part of a group of local supermarket companies that will buy 18 Rainbow Foods stores and rebrand the majority of them.
