DAVID JOLES � djoles@startribune.com Kilkenny, MN - Sept. 30, 2008- Hired hand Wayde Welter feeds grain to buffaloes at the Heavenly Ranch, a 74-acre Buffalo farm in Kilkenny, MN, about 60 miles from the Twin Cities. Kathy Crooks, a member of the Sioux Community in Scott County and her husband Ernie Symes are raising buffalo on the farm -- far from tribal lands -- and then selling it to the Shakopee tribe for use on things like the dinner buffet at Mystic Lake. The couple currently has 58 buffalo. "I can't keep up," with demand for buffalo meat, said Symmes, explaining that beyond the demand for the meat at Mystic Lake, more people are becoming health conscious and wanting buffalo for its lean meat.
