BASIC BRUSCHETTA

Makes 24 pieces.

• 24 (1/2 -in.) slices French baguette

• 2 tbsp. extra-virgin olive oil

Directions

Preheat a grill or broiler. Brush the bread slices lightly on both sides with the olive oil. Grill or place bread on a pan, 6 inches under the broiler, until lightly browned, turning once, about 3 to 4 minutes total.

Remove from the heat and cool. The bread slices can be toasted several hours in advance. Add toppings immediately before serving.

WHITE BEAN AND ROSEMARY BRUSCHETTA

Makes 24 pieces.

• 2 tbsp. extra-virgin olive oil

• 1 (19-oz.) can cannellini beans, drained, reserving the liquid

• 1 garlic clove

• 2 tbsp. chopped fresh rosemary

• 2 tbsp. chopped parsley, plus more for garnish

• 1/4 tsp. salt

• 1/4 tsp. freshly ground black pepper

• 1 recipe Basic Bruschetta

Directions

Combine olive oil, beans, garlic, rosemary, parsley, salt and pepper in a food processor and pulse 6 times. The mixture should be creamy, but slightly thick and lumpy. Add in some of the reserved bean liquid if too dry.

Spoon some of the topping onto each slice of bread, or serve the topping in a bowl accompanied by the grilled bread slices, letting guests top their bruschettas to taste.

TOMATO, BASIL AND FRESH MOZZARELLA BRUSCHETTA

Makes 24 pieces.

• 3 large ripe tomatoes, (11/2 lb. ), trimmed, seeded and diced (1/4 -in.)

• 8 oz. fresh mozzarella, diced (1/4-in.), at room temperature

• 1/4 c. chopped fresh basil

• 2 tbsp. extra-virgin olive oil

• 1 tbsp. balsamic vinegar

• 1 garlic clove, peeled and finely minced

• 1/2 tsp. salt

• 1 recipe Basic Bruschetta

Directions

In a medium bowl, stir together the tomatoes, mozzarella, basil, oil, vinegar, garlic, salt and pepper. Cover and let stand at room temperature for 30 minutes.

Spoon some of the topping onto each slice of bread, or serve the topping in a bowl accompanied by the grilled bread slices, letting guests top their bruschettas to taste.
