Details: The third Twin Cities-area Fresh Thyme Farmers Market grocery would anchor a new retail development now under consideration for the southeast corner of Hwy. 55 and Vicksburg Lane in Plymouth.

As proposed by Oppidan Investment Co. of Minnetonka, Fresh Thyme is slated for a 27,000-square-foot building on the 6.6-acre lot, which now holds a 57-year-old office-warehouse building that would be razed. The redevelopment would put retail uses in all four quadrants of the busy Plymouth intersection.

Next to Fresh Thyme on the east side of the center would be a 20,600-square-foot Goodwill store, the 26th metro-area location for the chain of thrift shops owned by Goodwill-Easter Seals of Minnesota. A 2,000-square-foot Starbucks coffee shop with a drive-through lane would be off on its own on the west side of the lot.

The site plan features a landscaped plaza in the northwest corner next to the Hwy. 55-Vicksburg Lane intersection to serve as a gathering place for pedestrians coming to the center on foot.

The site has no capabilities to treat stormwater, but Oppidan proposes to build a pair of underground filtration systems and a surface swale of vegetation to clean up the runoff before it enters the Minnehaha Creek watershed.

Pending city approvals, the developer is aiming for a midsummer construction start, with occupancy set for late spring 2016.
