Milwaukee has its brats. San Diego has its fish tacos. Los Angeles has its Dodger dogs. And now the search for the signature food at the new Twins ballpark is underway.
It began Tuesday with the selection of Sportservice, a division of Delaware North Companies, to run the stadium's concessions.
"We're looking to do something with walleye, maybe on a stick," joked Rick Abramson, president of Delaware North.
The Buffalo, N.Y., company has signed an eight-year contract with the Twins to run the concessions, gourmet catering and fine dining operations at the 40,000-seat stadium.
The firm also will run the retail stores in the ballpark, which is scheduled to open in 2010.
