PORK CHOPS WITH APPLE CREAM SAUCE

Serves 2.

• 2 pork chops

• Salt and freshly ground pepper

• Canola oil or clarified butter

• 1 apple, peeled, cored, cut into medium dice

• 1 shallot, minced

• 1/4 c. apple cider

• 1/2 c. chicken broth

• 1/4 c. heavy cream

Directions

Season the pork chops with salt and pepper. Place a sauté pan over medium-high heat until hot. Add the oil or clarified butter and the pork chops. Sear pork until done, 3 to 6 minutes per side, depending on thickness.

Remove chops to a warm plate; add apples and shallots to the skillet. Sauté until lightly browned, 1 to 2 minutes.

Deglaze pan with cider, then add broth and simmer, reducing liquid by two-thirds.

Stir in heavy cream, heat to a boil to reduce, then season with salt and pepper. Pour sauce over pork chops and serve.
