Spiced Fried fish with lemon pistachio couscous

Serves 4.

• 1 c. couscous

• 3/4 c. boiling water

• 2 tsp. lemon zest

• 1/4 c. fresh lemon juice

• 2 tsp. plus 1 tbsp. olive oil, divided

• 1 small red onion, finely chopped

• 1 garlic clove, crushed

• 1/2 c. roasted unsalted shelled pistachios

• 1/2 c. coarsely chopped fresh mint

• 1 tbsp. flour

• 1 1/2 tsp. ground coriander

• 1 1/2 tsp. ground cumin

• 1 tsp. sweet smoked paprika

• 1/4 tsp. cayenne pepper

• 4 white fish fillets (6 oz. each)
