Guacamole Tostadas With Fried Eggs

Serves 4.

• 4 corn tortillas, 6-in. size

• Olive oil

1/2 head butter lettuce, such as Bibb, torn into small pieces

2 1/2 tsp. fresh lime juice, divided

• Kosher salt

1 tbsp. finely chopped fresh flat-leaf parsley

• 2 avocados, halved and pitted

1/4 medium red onion, finely chopped

1 garlic clove, minced or pressed

• Black pepper

2 (15-oz.) cans kidney beans, drained and rinsed

• 4 eggs

• 1 c. shredded Cheddar cheese

1 red bell pepper, cored, seeded and finely chopped, optional
