Polenta Pound Cake with Orange and Dried Cranberries √

Makes a 5- by 9-inch loaf.

Note: This is a rich tasting, surprisingly light cake, wonderful with morning coffee or afternoon tea. Top it with berry sauce and whipped cream for dessert.

• Oil or butter for greasing the cake pan

• 1 c. all-purpose flour

• 1 c. cornmeal

• 1 tsp. baking powder

• Generous pinch salt

• 1/2 c. unsalted butter, at room temperature

• 1 c. sugar

• 5 eggs, separated

• 1 tsp. vanilla extract

• 1 tbsp. grated orange rind

• 2 tbsp. freshly squeezed orange juice

• 1/4 c. dried cranberries
