Recipe: Tex-Mex black bean wraps

These are easily multiplied. From About.com.

• 1 (15-oz.) can black beans, rinsed

• 1/3 c. chunky salsa

• 1 green bell pepper, thinly sliced

• 1 tomato, thinly sliced

• 1 c. shredded Cheddar cheese

• 1/2 c. shredded pepper Jack cheese

• 1 avocado, peeled and pitted

• 1/3 c. sour cream

• 1 tsp. lemon juice

• 4 (8-in.) flour tortillas

Directions

Place black beans in a medium bowl and mash with a fork. Leave some beans whole for a chunky texture. Add salsa and mix well.

In small bowl, mash avocado with sour cream and lemon juice.

Spread bean mixture over tortillas and top with bell pepper, tomato and cheeses. Place some avocado mixture over cheeses. Roll up sandwiches and serve.

Variation: Cut rolled sandwiches into smaller portions.
