Spiced Blueberry-Lemon Preserve
Makes 3 to 5 pints.
1 tsp. allspice berries
2 cinnamon sticks
4 tbsp. whole cloves
4 c. blueberries, rinsed
1 tbsp. grated lemon rind
1/4c. lemon juice
1 c. sugar
Directions
Tie the allspice berries, cinnamon sticks and cloves into a cheesecloth bag and put in a saucepan along with blueberries, lemon rind, lemon juice and sugar. Bring the preserve to a boil, lower the heat and cook until it starts to thicken, about 10 to 25 minutes, depending on how big and juicy the berries. To test, put a spoonful of the boiling preserve onto a refrigerated plate then put the plate back into the refrigerator until cool. The preserve is ready when it holds its shape. Remove the spice bag and turn the preserve into a bowl to cool before refrigerating (or turn into clean sterilized jars and process according to manufacturers' directions).
