Eden Prairie's own Luke Myers stars in a new TV commercial and video from the American Egg Board, better known as the folks behind the incredible edible egg. Luke, 14, is one of the real-life "incredible people" because he's a world champion sport stacker (otherwise known as cup stacking). He said that eating high-protein scrambled eggs helps him, well, you have to see the video to believe it at www.incredibleegg.org. Luke will compete at the World Sport Stacking Championships in April, where he will defend his world record of stacking 12 cups in three different formations in less than seven seconds. The website also offers recipes, from deviled eggs to meringues.

Langton series a first

In a melding of spirituality and sustainability with soups and seafoods, chef Brenda Langton, right, is presenting a first-of-its-kind series of classes in partnership with the University of Minnesota's Center for Spirituality & Healing and the Wedge Co-op. "Healthy Eating, Healthy Living" is a three-evening course in which Langton shares her philosophy and recipes for a healthful diet and lifestyle. The course will be offered from 6 to 9 p.m. March 10, 17 and 24 at Roth Distributing, 1300 W. 47th St., Minnetonka.

Langton is a senior fellow at the Center for Spirituality & Healing, owns Cafe Brenda and Spoonriver restaurants and founded the Mill City Farmers Market. Her passion for simple, wholesome ways to better nourish ourselves is timely, given the stress that many feel. "There's no better time than right now to take charge of your health by cooking delicious foods that build up our immune systems," she said. "It's my hope that this class will provide inspiration for people to practice simple cooking techniques in a fun, relaxing environment in a way that's also healing to our minds and bodies."

Register at www.csh.umn.edu or call 612-624-9459. The fee of $225 includes Langton's "Cafe Brenda Cookbook" and will feature a tasting menu of local foods each night. Class is limited to 50 participants.
