Cook like a food trucker

You know the world has tilted just a bit differently when the idea of home cooks learning how to make food that ordinarily comes out of trucks is a big deal. But the vehicles have changed, with food trucks producing some truly innovative foods and flavors. The Minnesota Landscape Arboretum is debuting its "Untrucked Food Truck Series" of cooking classes this month with its first class from 10 a.m. to noon April 4 with chef Stephen Trojahn. The owner of Gastrotruck is known for his black-bean burger with apple-jalapeno relish or pork belly sandwich with kimchi. His crew also follows zero-waste procedures worth knowing.

On April 10, Home Street Home's chefs Destiny Buron and Daniel Kidd will share their recipes and travel tales gleaned while perfecting their globally inspired comfort food such as fish tacos or Korean BBQ burger.

Each class is $39 for arboretum members; $49 for nonmembers (including arboretum gate admission). Or you can "bundle" both classes for $66 for arboretum members and $83 for nonmembers when you sign up for both classes. Register at 612-301-1210 or www.arboretum.umn.edu/cookingclasses.aspx.

Enter your best grilled cheese

Grilled cheese sandwiches may be overlooked, given that they're mostly bread and cheese, grilled. But Wisconsin's Milk Marketing Board means to change that with its annual Grilled Cheese Recipe Showdown and a grand prize of $15,000 during this, National Grilled Cheese Month. Entrants, both amateur and professional, must submit an original grilled cheese recipe and photo featuring Wisconsin cheese. Deadline is May 12. For all the details, visit www.EatWisconsinCheese.com. At the least, you can peruse several years' worth of recipes finalists, some of which boggle the imagination, right down to their titles. The Devil Wears Gouda?
