How to make perfect rice

Rinse 3 cups rice well in a colander under the tap. (Jasmine rice — also called Thai rice — is particularly good.) Place rinsed rice in a saucepan with 4 cups water and bring to a boil over high heat. Give the rice a good stir to remove any grains sticking to the base of the pan, then continue to boil for a few minutes until the surface of the rice is dry and covered in little round "breathing" holes.

Cover the pan tightly, reduce heat to a minimum and continue to cook for 12 to 15 minutes, until tender. This will create a golden crust on the bottom of the pan, which is traditionally in demand, especially by children.
