Entrepreneur Pam Knutson is making soup, so you don't have to. Not just any ordinary soup, either, but creative, hearty, all-vegetarian soups. Most of Knutson's output (she sells under the name Birdsong Soups) goes directly into her subscription-only soup club -- think of it as sort of a CSA for soup lovers. But a small percentage gets channeled into the freezer case at Kitchen in the Market, where lucky shoppers have been known to run into quarts ($11) of a stunner of red lentil/root vegetable/squash soup seasoned with tamari, or the only vegetarian chili I've ever encountered where I didn't miss the beef, not for a single spoonful. I'm kicking myself for not grabbing another quart of Knutson's powerhouse cream of broccoli-Cheddar. "I'm just relieved that it's finally cold enough in Minnesota that it's soup weather," Knutson said with a laugh. Yeah, I know how I'll be stocking my freezer this winter.
