One Great Dish: Captain's curry at Singapore Chinese Cuisine

There are two menus at Singapore Chinese Cuisine, 1715 Beam Av., Maplewood, 651-777-7999: the tame "American" one, and the thrilling "Chinese" menu -- a roster of skillfully prepared and subtly spiced Malaysian favorites. One of the stars of the latter is Captain's Curry ($9.95). Chef Kin Lee has a deft way with curry, and this dish is one of his best: Complex and fiery, it's a heaping plate of chicken breasts cooked in a blend of more than two dozen spices. One taste and you'll never look at the American menu again.
